Dave's hot chicken started as a late-night experiment in a tiny New York apartment kitchen. Founder Dave Chen had one obsession: creating the perfect hot chicken — a bird with a crispy, spice-coated crust and tender, juicy meat that left a lingering, satisfying heat.
After months of testing every spice blend, every oil temperature, and every marinade technique, Dave brought his creation to a local pop-up. The line wrapped around the block. Within six months, daves hot chicken had its first brick-and-mortar home at 944 8th Ave, New York.
Today, we serve thousands of guests weekly — but every piece of chicken still goes through the same meticulous process Dave perfected in that tiny kitchen. Some things never change when you're chasing perfection.
